Festive mini puddings

When it comes to the perfect mini treat to serve to the special sweet tooth's in your life? The proof is in the pudding with these rich and gooey, melt-in-your-mouth desserts.

Ingredients

  • 500g mixed dried fruit
  • 130ml brandy
  • 125g unsalted butter
  • 160g brown sugar
  • 2 eggs, lightly beaten
  • 1 tbsp treacle
  • 1 orange, zested
  • 100g plain all purpose flour
  • 2 tsp mixed ground spice
  • 30g flaked almonds
  • 1 apple, peeled and grated
  • Butter for greasing
  • Warm custard to serve
  • Glace cherries to serve

Method

  1. Soak the dried fruit in the brandy for a minimum of 24hrs
  2. Preheat oven to 180C
  3. Grease eight single serve pudding tins or a muffin tray
  4. Attach the paddle attachment to a KitchenAid stand mixer, combine the butter and brown sugar. Beat until lightly fluffy.
  5. Add the eggs one at a time while beating, follow by adding the treacle and orange zest
  6. Slowly add the plain flour and mixed spices until the mixture comes together
  7. Turn the machine off and fold in the soaked fruit, flakes almonds and grated apple
  8. Spoon the mixture evenly into the pre greased pudding tins or muffin tray
  9. Fill a larger baking tray half full with boiling water, place puddings into the tray and gently transfer to the oven. Bake for 40 minutes or until a skewer comes out clean when testing
  10. Remove the individual puddings and allow to cool for a few minutes. Loosen around the edge with a butter knife before turning them out on to serving plates
  11. Serve with warm custard and a place cherry on top.
